Quick Recipes For Working Moms
I always use to think that it would be difficult to prepare a good meal which could satiate my hunger yet not make it hours of cooking.
Something which can satisfy my taste buds but is quick to make (P.S. I’m not talking about the instant food and mixes readily available in the market).
So here are some of the tried and tested quick recipes for working moms which don’t require hours in the kitchen, but are healthy and tasty.
Simple Chili- capsicum, olive bread
- Flour 2 cups
- Dried yeast a tablespoon
- Chili 3-4
- Olives, as per liking (I used about 10 of the black ones)
- Capsicum sliced about a cup
- Onions one or two sliced thinly
- Cheese, grated 2-3 tablespoons
- Butter 100 grams
- Baking powder 1 teaspoon
- Salt as per taste
- A spoon of regular sugar
- Chili flakes for that extra spice
- Oregano seasoning as per taste
So first of all sift the all-purpose flour with baking powder and dried yeast and keep aside. Cut all your veggies capsicum, chilies, and onions.
In a separate bowl, sift the butter with salt and sugar and oregano. Once the butter is fluffed (it took me 5 minutes) mix the flour, veggies, and butter altogether.
Preheat oven at 200 degree Celsius for 2 minutes, then take a large rectangular baking tray and grease it with butter or place a baking paper.
Transfer the mixture prepared. Add grated cheese and on the top, garnish with capsicum, chilies, olives, and onions. Place the dish carefully in the pre-heated oven to bake for another 10 minutes.
After 10 minutes, check your bread with a knife to see if it is thoroughly cooked or not.
Once it is cooled you can enjoy your home cooked fresh bread loaf flavored with piping chilies, capsicum, olives, and onions.
It goes well with any gravy left over from last night or pasta or just with butter spread if you want to enjoy the freshness of the bread.
- Tofu 200grams
- Capsicum two pieces medium size
- Tomato 2 pieces
- Baby corn 100 grams
- Carrot 1-2
- Coriander for garnishing
- Black pepper and salt as per taste
- For dressing:
- Extra virgin olive oil 2 tablespoons
- Salt as per taste
- Chili flakes
- Thyme seasoning
- Lemon juice 1 teaspoon
Another simple yet delicious recipe is Tofu Salad. First make the dressing by mixing extra virgin olive oil with lemon, thyme, chili flakes, and salt. Keep it aside.
Now chop all the vegetables in rectangular long strips. Chop the baby corn too in long strips. In a pan take some extra virgin olive oil and sauté the vegetables a little to get a little crunch in tofu and smoked effect.
Take the veggies off the pan and place them in a salad mixing bowl. Add to veggies the dressing prepared earlier and kept aside. Sprinkle some freshly grounded black pepper and salt to taste. Crispy Onion rings (egg less)
Being a crazy fan of onion rings I was searching for a recipe to make them at home. Instead of eggs I’m using baking powder with few changes in the recipe to make it tasty and quick.
So here is my version of onion rings, hope you guys enjoy eating it with your family. This is another quick recipe for working moms who wants to serve their kids delicious tasty food in minutes.
Yellow or white onion -2 pieces
Maida/ all purpose flour 1 cup
Baking powder ½ tsp
Corn flour (corn starch) ¼ cup
Oregano ½ tsp
Garlic-1 finely chopped
Milk ¾ cup
Fresh bread crumbs ¾ cup
Salt as per taste
Black pepper powder as per taste
Make thick slices of onions and separate the discs (keep the middle portions for regular cooking aside). Take a mixing bowl and pour flour in it, then pour the onions and coat them well. Now in a separate bowl, add corn flour, oregano, garlic, and baking powder in it and mix well.
Now add milk to make a batter which is neither too thick nor too thin. Dip each onion ring in the batter and keep them on a wire rack. Take bread crumbs on a plate and coat the dipped rings with it and then again arrange the onion rings on the wire rack.
Heat oil in deep kadhai and keep the flame on medium. Fry these rings on medium flame till they turn golden, turning once in between. Drain the excess oil on a paper towel, sprinkle some black pepper or chat masala and is ready to eat.
Yummy egg less donuts
2 cups of all purpose flour or maida
½ tsp of instant yeast
¼ cup sugar
¾ cup of milk
¼ cup of sugar
3 tablespoons of oil or butter
I pinch of grated nutmeg (jaiphal)
1 tsp of vanilla essence
For chocolate glazing:
2 tablespoons of cocoa powder
3 tablespoons of icing sugar or powder sugar
4 tablespoons of milk
¼ tsp of vanilla essence
Recipe for dough:
Warm the milk a little and take it in a mixing bowl. Add sugar to it and instant yeast, mix well. Then add the flour one cup only and mix well with spoon. Cover the bowl with a kitchen towel and allow the dough to rise for 20 to 30 minutes.
After 30 minutes you will see that the dough has become stringy and has air pockets. Now add the remaining I cup of flour, 3 tablespoons butter or oil, 1 tsp vanilla essence, and a pinch of grated nutmeg.
Mix everything together and knead the dough well. Add ¼ cup of milk to knead.
Make the dough soft and smooth. Cover the bowl again and leave the dough for another 45 minutes. While the dough rises lets prepare glaze.
Recipe for chocolate glaze:
Take a bowl and add 3 tablespoons of powder/ icing sugar, 2 tablespoons of cocoa powder, ¼ tsp vanilla essence, and 4 tablespoons milk. Mix all well and keep aside.
Baking doughnuts recipe:
Line a tray with butter paper. Gently knead the dough once again. Sprinkle some flour on the counter and roll the dough into a circle, having ½ or ¾ inch width. Using doughnut cutter press the dough to make doughnuts. If you don’t have the cutter any lid can be used to shape doughnuts. Make a center hole in all doughnuts. Now place the cut doughnuts on a lined tray carefully, cover and allow it to rise again for 15 to 20 minutes. Preheat oven at 180 degree Celsius place the tray in the center. Bake for 15 to 25 minutes. Bake till they are golden. Remove the doughnuts and keep them on a wire rack.
Melt 2 tablespoons of butter in a steel bowl, place the doughnuts upside down in the butter and then place them in chocolate glaze.
Keep them on a wire rack to cool. Serve them hot or at room temperature. You can store the leftovers in the fridge and warm it a little in microwave before serving.
Veg Hakka noodles with smoked veggies
This is my last dish in the series of quick recipes for working moms, so lets look at ingredients list.
Noodles (I used Hakka ones you can use the one which you like)
Ginger about an inch and half
Garlic about a clove, finely chopped
Onions 2 large finely chopped
Chilies green 2-3
Grated cabbage about a cup
Started with setting the noodles to boil (for 3 minutes) as I arrange my vegetables, chopped capsicum, onions, ginger, garlic I usually keep in my refrigerator as peeled and chopped in airtight containers (it lasts for a week easily), cucumber into cubes and tofu into rough rectangular shape.
Take some oil in a pan and sauté all the vegetables a little, adding a little salt to them. Meanwhile, the noodles are boiled, strain them out and drop a few drops of oil to make them non-sticky.
In another pan with a little oil first pour all your veggies (keeping aside cucumber cubes and a little of sautéing capsicum) then add noodles, a tablespoon of each, vinegar, soya sauce and tomato sauce.
Turn off the heat and toss everything well. Serve on the dish noodles first, and then on sides keep the sauté cucumber and capsicum, Bon Appetite!
So how did you find mine quick recipes for working moms ? These were some of my all time favorite quick meals when I feel like taking a take away.
Believe me, these dishes will take less than fifteen minutes and are great to eat. Bonus point as these are made using lesser oil they won’t make you feel guilty too except onion rings.
